October Group Meeting
On the 29th of November, we were shown how to cook pumpkin fritters! Annadel Dyer shared with us her absolutely delicious vegetarian cooking. It was such a great morning to learn a new skill, share different foods and meet new people!

Vegetarian Pumpkin Fritters
Ingredients
- Half a pumpkin (washed and deseeded)
- 1 onion finely chopped
- 4 pieces of garlic finely chopped
- 1 red or green capsicum
- 1.5 Cups Plain flour
- 3 eggs
- Salt and pepper
- Cooking oil for frying
Note: You can use grated zucchini, carrot and other vegetables to make the fritters
Method
1. Grate the pumpkin with skin on or off
2. In a mixing bowl, add chopped onion, garlic, capsicum, grated pumpkin (or vegetables of choice), eggs and flour
3. Mix well until everything is combined. You can add more flour if mixture is too thin.
4. Season with salt and pepper to taste
5. Heat oil in a frypan and scoop up mixture in a spoon to fry. Once light brown on both sides, remove and let to cool down
6. Enjoy!
